How to grow soybeans

Soybean grown for the table, rather than dried for oil or feed, is a bushy warm-season legume harvested while the pods are still green and full, then steamed or boiled in the pod as a snack. A planting comes on all at once rather than trickling in over weeks, since the pods on a given plant mature within a tight window of each other. As a legume, it also fixes some of its own nitrogen through root nodules, part of why gardeners tuck a short row of it between heavier feeding crops. The plants stay compact and bushy, rarely needing staking.

The hardest part of growing soybeans well for fresh eating is catching the harvest window. South Dakota State University Extension notes the ideal picking stage lasts only a few days, when the beans inside the pod are nearly touching but before the leaves begin to yellow. A second-year gardener watching the calendar rather than the plant, expecting a longer harvest spread like snap beans give, can let that window close while waiting for a fuller pod. Once yellowing starts, the beans turn starchy instead of sweet and nutty, and no amount of cooking brings that flavor back.
