How to grow endives

Endive is a leafy chicory grown as a salad and cooking green, its ruffled, deeply cut leaves forming a loose rosette in the bed. Home gardeners plant it as a cool-season crop, often timed for fall harvest, when milder temperatures and shorter days favor the tight, frilly heads the plant is prized for. Compared with lettuce, it holds up better through a warm early-fall stretch, giving a gardener more room on either side of frost to fit it into a rotation. Its flavor carries a natural sharpness that sets it apart from milder greens.

The hardest part of growing endive well is managing bitterness, which builds directly with heat. University of Minnesota Extension notes that hot summer conditions push the flavor into extreme bitterness, and North Carolina State Extension explains that the chlorophyll driving that sharpness can be slowed by blanching, gathering the outer leaves and tying them closed a few weeks before harvest. A second-year gardener who treats endive like a cut-and-come-again lettuce, picking leaves straight off an open head through a hot stretch, ends up with a bowl too harsh to eat plain.
